This recipe is a favorite of ours. It is fast, easy and oh, so good.
4 medium b/s chicken breasts
3 Tbsp flour
3 Tbsp butter or margarine
1 c. fresh sliced mushrooms
1/2 c. dry Marsala
1/3 c. chicken broth
dash of salt
dash of black pepper
1/2 c. shredded motz. cheese
1/3 c. Parmesan cheese
1/4 c. thinly sliced green onions
Cut eat breast in half lengthwise. Place pieces in a large ziploc bag and pound each piece with a meat mallet to 1/8" thickness. Coat chicken lightly with flour. In a skillet melt one-third of the butter over medium heat. Add four of the chicken pieces. Cook for two minutes on each side. Transfer to a rectangular baking dish. Repeat with another one-third of the butter and chicken pieces.
Melt the remaining one-third of the butter in the skillet; add mushrooms. Cook until tender; stir in Marsala, broth, salt and pepper. Bring to a boil and boil for about five minutes or until mixture reduced to about one cup. Pour over your chicken.
Combine your cheeses and green onions; sprinkle over the chicken. Bake uncovered at 375 for about 20 minutes.
